Grown in the vineyards located in Fattoria Voltrona among the rolling hills of San Gimignano.

3.800/4.400 plants per hectare.
75 - 80 quintale per hectare (1 quintale = 100 kg).
Sangiovese 90%, Canaiolo Nero 4%, Trebbiano and Malvasia 3%.
CLIMATE AND HARVEST
The climate in spring was favourable for the growth of the plants after the winter season. At the end of July we started selecting the grape bunches and left only the best and most evenly spaced. The others were cut and dropped on the ground insuring that the remaining bunches would mature in the best possible condition. The grapes were harvested and within two hours promptly transported to our winery.
VINIFICATION AND REFINEMENT
The grapes stems were removed and lightly crushed before going into stainless steel tanks where the alcoholic fermentation took place at a temperature not exceeding 86 F. The maceration lasted for 24 days after which the wine was transferred into other tanks where the malolactic fermentation was finished. The refinement after the filling into bottles was for a period of 3 months at 58 F. The wine was bottled after a light filtration so that a presence of light sediment only shows forth the quality of the product.
