ORIGIN Grown in the vineyards San Lorenzo, Querciolaia and Lucciola located in Azienda Agricola San Lorenzo among the rolling hills of San Gimignano. TRELLIS SYSTEM Horizontal single cordon and Tuscan single arch. VINEYARD SIZE The grapes were harvested from 4 hectares of vineyard. DENSITY OF VINEYARD 3500/4000 plants per hectare. QUANTITY HARVESTED 35 quintale per hectare (1 quintale = 100 kg). GRAPE VARIETIES Sangiovese 90%, Canaiolo 9%, Colorino 1%. ANNUAL PRODUCTION 10.640 bottles. CLIMATE AND HARVEST At the beginning of August we started selecting the grape bunches and left only the best and most evenly spaced. The others were cut and dropped on the ground insuring that the remaining bunches would mature in the best possible condition. The grapes were harvested by hand and were placed in plastic boxes of 15 kg each which were then promptly transported to our winery. VINIFICATION AND REFINEMENT The grapes stems were removed and the grapes were lightly crushed before going into stainless steel tanks where the alcoholic fermentation took place at a temperature not exceeding 86 F. The maceration lasted for 24 days after which the wine was transferred into small French oak barrels where the malolactic fermentation was finished. The refinement in French oak was for a period of 12 months with an additional 6 months in bottle stored at 58 degrees F. The wine was bottled without filtration so that a presence of light sediment only shows forth the quality of the product. SERVING TEMPERATURE 18ºC, 65 degrees Fahrenheit. SERVING SUGGESTIONS Roasted or grilled red meats with sauces and red meats.
